We have made available a basic brewing recipe.  If you follow the directions,  good sanitation procedures and common sense you will make great beer!

BREWFERM recipe

Bring one gallon water to a boil. Add the can of BREWFERM and one pound sugar  or malt ( about 3 cups). Stir thoroughly. Add to 2 gallons cold water. Reduce temperature mix to less then 80 degrees F. Add yeast, allow yeast to sit for ten minutes and then stir thoroughly. Seal fermenter and allow to ferment at least 10 days at room temperature 70 degrees F. Use 1/2 cup corn sugar for priming.

Dave's BREWFERM recipe

Bring one gallon water to a boil. Add the can of BREWFERM and one can malt extract or three pounds of light DME. Stir thoroughly. Add to 3 gallons cold water. Reduce temperature mix to less then 80 degrees F. Add yeast, allow yeast to sit for ten minutes and then stir thoroughly. Seal fermenter and allow to ferment at least 10 days at room temperature 70 degrees F. Use 1/2 cup corn sugar for priming.

6 gallon recipe will produce a beer about 3-3.5 % alcohol or about 60 12-ounce bottles. Less water the higher the alcohol content. Bring one gallon water to a boil. Add the can of hopped malt extract and 6 cups (corn sugar/malt/rice syrup). Stir thoroughly until dissolved. Bring mix back to a boil and maintain for 2 - 5 minutes. Add to 5 gallons cold water. Reduce temperature mix to less then 80 degrees F. Add yeast, allow yeast to sit for ten minutes and then stir thoroughly. Seal fermenter and allow to ferment at least 10 days at room temperature 70 degrees F. Use 3/4 cup corn sugar or 2/3 cup household sugar for priming.

BITTER - Styled in the Old English tradition. Darker in color than lager beers.

DRAUGHT - A full and flavorful beer with a subtle "bitterness."

LAGER - A full-bodied lager style beer with a refreshing taste.

REAL ALE - True full-bodied ale enhanced by a soft, fruity character.

STOUT - Robust full-flavored with a rich and dark texture.

CLASSIC OLD DARK ALE - Darker beer style with a full body and flavor.

PALE ALE (INDIA) Malty fullness and fruity esters are balanced by a lingering hop bitterness. Originated from Burton, England which shipped beer to the Empire (especially India, therefore India Pale Ale) and was originally heavily hopped. 

NUT BROWN ALE  Deep amber color with a medium sweet malt-driven palate and a wonderful nutty dryness.

PILSNER Delicate palate combining malt characters with a subtle hop aroma and dry finish.

2.5 Gallon all Malt recipe using one 4 # can of Alexanders unhopped malt extract will make a beer about 3-3.5 % alcohol or about 24 12-ounce bottles. Less water the higher the alcohol content. Bring one gallon water to a boil. Add the can of *___________(Alexanders plain light 4.0 pound can) malt extract. Stir thoroughly until dissolved. Bring mix back to a boil and add 1/2- 1 ounce Hallertau hop pellets boil 25 minutes. At 25 minutes add 1/2-1 ounce Saaz hop pellets boil additional 5 minutes. (total boil time 30 minutes) Add to 1 gallons cold water. Reduce temperature mix to less then 80 degrees F. Add yeast, allow yeast to sit for ten minutes and then stir thoroughly. Seal fermenter and allow to ferment at least 10 days at room temperature 70 degrees F. Use 1/3 cup corn sugar for priming. 

* Use any unhopped malt. Remember less malt less alcohol. Using 1 pound of malt in 3 gallons water will produce a beer with less than 1% alcohol.

GRAINS Bierhaus offers a variety of grains. The use of grains for a recipe may be 1/2 cup to 4 cups (about a pound). Use of grains allows you the home brewer to make unique beers using malts as your base grains (and hops) for the flavor and color. A light malt color can be changed by adding 1/2 cup of a grain such as Black Patent or Roasted Barley. The more grain added the darker the beer. Grains are sold in 1 pound and 5 pound bags. There is no additional charge for crushing grains. Grains will be shipped whole (uncrushed) if not specified. Prices for 1 pound grain $2.00 s/w 2 lbs. 5 pounds grain (same grain) $7.50 s/w 7 lbs.

How to use Bring the desired amount of water to a boil remove from heat Add crushed grains to water and allow to steep for at least 30 minutes. Grains may be placed in a muslin bag or mixed in the water.( If mixed in the water the grains will have to be strained out before water is brought back to a boil) If grains are boiled tannins will be released resulting in a very nasty tasting beer. Add malt extract and follow the kit directions provided earlier in this page.
